Easy apple crisp with honey.

Yummy goodness!

Easy Apple Crisp with Honey:

Ingredients:
4 1/2 C peeled, cored and sliced apples
1/2 C honey (or less?*)
1 tsp ground cinnamon
**I also added more spices like ground cloves etc...**
1/2 C  brown sugar (or less??*)
3/4 C ground rolled oats
3/4 C rolled oats (not ground up)
4 tbsp butter (or less?*)

*to your liking...

Directions:

Preheat oven to 350 degrees F.
Evenly spread the apple slices in the dish
Drizzle apples with honey
In a bowl, mix the spices, brown sugar, all of the oats, and butter until the mixture resembles coarse crumbles.  Sprinkle over the apples.

Bake 25 minutes until apples are tender and topping is lightly browned.


I ground the 3/4 cups of rolled oats up in my magic bullet blender until it looked like the same texture of flour.  I like that by using the oats and honey, you avoid using so much refined sugar and flour.    And I don't worry so much about using butter as this is a TREAT and not something I will eat everyday.  Instead of topping it with ice cream or whipping cream, I put my serving over plain Greek yogurt.   SO GOOD!

Make it!  Right now!!  If you have any other suggested substitutes or add ins, please let me know!  Pecans would be awesome in there.

    I bought the book "Wheat Belly" for my Nook yesterday! I'm going to read it and DO IT! I've already eaten almost zero wheat since October 17th, and I'm still down 7 pounds - I've usually yo-yo'd up and down at least a pound or two, a few times, in a given similar stretch of time. Could the lack of wheat also be the end of yo-yoing for me?!
    Time will tell! I, for one, am PSYCHED.
    I can't believe how few HUNGER PANGS I've had since doing this. I'm doing a few other things along with this. Right now I'm working on a LONG post on my weight-loss blog... I will share the link when I finish it, so I don't have to write everything out twice, there and here! But it's major! MAJOR!!! LOL

  2. Can't wait to read it!! Ever since reading about your no wheat, I have been inspired and re-energized!! I'm going to do this week of absolutely no wheat (which won't really be all that hard to do as I eat so little of it anymore) and just see if I notice any difference. Way to go!!

  3. OMG, it's insane. The no wheat is the Magic Pill for me!!! I noticed a difference after 24 hours! CRAZY!!! And then the couple of days after that, I had a bunch of "food events" with family happen all at once, (anniversary lunch with hubby, big buffet lunch at a conference out of town on Saturday afternoon AND Mexican dinner out with hubby that night...) and by Sunday morning, I felt HORRENDOUS. I avoided wheat as much as possible during those events, but not entirely, and OMG did I notice the difference!!! Now it's Monday, I'm back on it, and eating snap peas with hummus with my hot tea mid-morning. ZERO wheat day today for me... until dinner tonight! AAARRRGGGHHH! Big dinner at my mom's house tonight. I know there will be both wheat-filled and non-wheat options, but I always have a REALLY hard time watching other people slather fresh-baked dinner rolls with real butter and pounding can after can of Dr. Pepper while I much on a carrot and sip my ice water...wish me luck!

    I'm almost done with a VERY LONG blog post of my own, on my blog... I'll add a link to that when I finish proofing it.
